Chicken parmesan is one of the most exciting dishes anywhere on the planet and the secret behind this one is the flour, egg wash, breadcrumbs and then that crispy outer layer texture to create an outstanding meal. Here’s an easy chicken parmesan.
What you’ll require to pull this recipe off is one large boneless chicken breast, some all-purpose flour, panko breadcrumbs (or any breadcrumbs of your choice), 3 eggs, 3 grated tomatoes, tomato puree, grated cheese (preferably a little of both mozzarella and parmesan), basil, dried oregano and finally salt and pepper to taste.
Beginning by butterflying your chicken breast which is basically slicing it in half from its side then opening it up into like a butterfly shape. To get it nice and even, once you’re done butterflying, place some parchment paper on top of your chicken then using a rolling pin slightly flatten the meat being careful not to ruin its shape.
Place your all-purpose flour and breadcrumbs into two separate bowls. Mix some of your grated cheese into the bow that has your breadcrumbs. Beat your 3 eggs in another dish adding salt and pepper to taste. First, place your chicken into the bowl that contains your all-purpose flour then coat and dust. Once done place it into your egg wash and then, finally, thoroughly coat it with your breadcrumbs.
Next put 2-3 tablespoons of oil into a hot pan and shallow fry the chicken for about 3 minutes on each side. Make sure your oil and pan are piping hot before you put your chicken in. Using your grated tomatoes, basil, oregano and tomato puree make a simple tomato sauce and place smear some on top of your cooked chicken. Add your grated cheese to the smeared tomato sauce (as much as you’d like) then into the oven for 5-7 minutes and voila…simple and easy chicken parmesan.
